New Year, Different Vegan Eats: High Fat, Low Carb Vegan What I Eat in a Day

So the new year has arrived, happy new year! I hope you all had a wonderful festive season and a blessed new year. Let me just give you a little update on what is happening with me. Here goes>>>

You will know that I went on a liquid cleanse. I was planning on doing between 10 and 30 days, then I changed my mind and decided to do 100 days of smoothies and juices. However, I decided to stop at about day 20 because I found out that I was having blood sugar issues. Some people have told me that it must be because I was eating too much fat in combination with the fruit. This is most definitely not the case! I have always kept my fats relatively low when I am eating a large volume of fruit or starch carbs. I must admit though, I did feel good for a few days. Then things changed and I started to feel lethargic and kind of dizzy when I would have a fruit smoothie. Anyway, let's fast forward to a couple of weeks ago. I decided to try adding more fat and more greens to my diet instead. Now let me tell you, I feel fantastic!

I really do believe that no one lifestyle fits all, every body is different. I don't think that people should be ridiculed for not following a specific way of eating. I think people should find out what works best for them and stick with that until it no longer serves them. I have been eating intuitively for a while now. So, I listen to my body and go with what my body is telling me. Right now, my body is telling me to add more fats and greens to my diet. I feel amazing!

So what am I eating?
I am going to do a few what I eat in a day videos on the YouTube channel in the next few weeks. However, for the meantime here is what a typical day would look like for me.

Morning

  • 1 litre of water with cucumber and lemon in it 
  • spirulina, green tea with 1 tsp of coconut oil 
  • Avocado, spirulina and coconut milk smoothie with added water 
Afternoon
  • 1 avocado, mashed cauliflower with coconut oil and Himalayan salt. Pile of lettuce 
  • Green tea with coconut oil 
  • Snack on macadamia nuts and pumpkin seeds 
Dinner 

  • Cauliflower, broccoli with coconut oil and Himalayan salt. Chickpeas, pile of greens and cucumber. 
I eat as much as I like until I am full. I drink 3 litres of water a day.
